VEGGIE TASTY: Raspberry Mush!

Or, more precisely - raspberry, crushed coconut biscuit, natural yogurt and white chocolate mush. Sounding good already, right? Well, what if I told you that the further to the bottom of the glass you get, the softer it is until eventually it's just like sweet raspberry mush. Mmmm. Mush...

As per always with things like this, I didn't measure anything. So, here are the rough ingredients. Feel free to chop and change anything, obviously it will depend on how big your glass/ stomach is!

INGREDIENTS (Serves 1)
About 3 - 4 crushed, crunchy biscuits (I used Fox's coconut crunch).
4 tablespoons of natural yogurt
Six chunks of white chocolate
Half a small punnet of raspberries

METHOD
1. Crush the Hell out of the biscuits. You can use a food processor if you're fancy like that. If you're more primitive (like me) pop them in a freezer bag and batter them with a rolling pin.

2. Melt the chocolate on a low heat in a pan. Keep stirring so that it doesn't catch the bottom and burn.

3. Once the chocolate has melted, mix it into the natural yogurt. This takes the sharpness off the yogurt, making it taste a bit like Milky Bar yogurt!

4. Pop your ingredients into a tall glass layer by layer.

5. DIG IN!


This is SUCH a fast, easy dessert and it tastes amaaazing. I'm not a massive fan of natural yogurt, but the white chocolate added just the right amount of sweetness without it being sickly. Also - I don't usually like raspberries, but love them in mush form!

You can make all sorts if changes this recipe...How about bananas, ginger nut biscuits and dark chocolate yogurt mix? Or using flavored chocolate? Oooor make it low fat with oat cakes instead of biscuits and plain natural yogurt (hellooo awesome breakfast food).
