Banana Strawberry Cupcakes

I adapted this from an old sponge recipe and basically just replaced some eggs with bananas and cut down on the sugar (since bananas contain natural sugars). And came up with some sort of basic strawberry frosting recipe.


I think this mix made about 20 cupcakes...can't be sure, since they usually get dived on as soon as they're ready!

INGREDIENTS - Banana Sponge Mix                      
1 large bananas, mashed
2 large eggs
4 Oz. self raising flour
4 Oz. caster sugar
Pinch of salt
Teaspoon baking powder

METHOD
Beat the egg, banana and sugar together in a bowl until thick and creamy. Don't expect it to go smooth, the banana wont allow for that! Now sift in the flour and baking powder with the salt and fold into the mixture. Divide evenly into paper cake cases on a baking tray and pop into the oven at a medium heat. Remove from oven when golden brown and springy to the touch. Allow to cool as you make the frosting...

INGREDIENTS - Strawberry Frosting
3 desert spoons soft butter or margerine
A whole load of icing sugar (just keep mixing it in until firm)
Strawberry essence to taste

METHOD
Fling it all in a bowl and whip the hell out of it with a fork until it can form peaks which stay firm. Once the cupcakes have cooled, smush the frosting on with a spoon or squeeze it on through a piping bag.

  1. Oooooh, I might have to try this! Last two times I baked was a disaster - Coca Cola cupcakes are too hard! I need some practice so I can make Hallowe'en cupcakes!

    @ cait, haha, I haven't attempted strawberry sponge yet...Next up is chocolate sponge with mint frosting - will probably be a disaster!
